🍫 Soft Chocolate Icing

Ingredients

  • ⅓ cup cocoa
  • 3 Tbsp cornstarch
  • 1⅓ cup sugar
  • ¼ tsp salt
  • 1½ cup milk
  • ½ stick (4 Tbsp) butter
  • 1 tsp vanilla

Instructions

  1. In a saucepan, whisk together ⅓ cup cocoa, 3 Tbsp cornstarch, 1⅓ cup sugar, and ¼ tsp salt.

  2. Gradually stir in 1½ cup milk until smooth.

  3. Cook over medium heat, stirring constantly, until thick.

  4. Remove from heat and stir in ½ stick butter and 1 tsp vanilla until butter is melted and incorporated.

  5. Cool before spreading on cake or cupcakes.


Tips

  • Press plastic wrap directly onto the surface while cooling to prevent a skin from forming.
  • For thicker icing, cook a bit longer; for thinner, add a splash more milk.
  • Works great on sheet cakes, layer cakes, or brownies.
