Mexican Rice
🍚 Mexican Rice
Serves 4
Ingredients
- 1 cup rice, washed
- 2 cloves garlic, minced
- 1 Tbsp vegetable oil
- 2 Tbsp tomato paste
- ¼ cup salsa
- 2 tsp tomato bouillon
- 1¾ cups hot water
Instructions
Heat 1 Tbsp vegetable oil in a pan over medium heat.
Add 2 cloves minced garlic and sauté until fragrant.
Stir in 1 cup washed rice and cook briefly until lightly toasted.
In a bowl, combine 1¾ cups hot water, ¼ cup salsa, 2 tsp tomato bouillon, and 2 Tbsp tomato paste. Stir to dissolve completely.
Pour the mixture into the pan with the rice. Stir to combine.
Cover and cook on low heat for 18 minutes.
Fluff rice before serving.
Tips
- Don’t lift the lid while cooking—steam is essential
- Let rice rest covered for 5 minutes after cooking for fluffier results
- Add frozen peas and carrots in step 5 for arroz con verduras
