🍋 Lemon Tea Bread
Ingredients
Bread
- ½ cup shortening
- 1 cup sugar
- 2 eggs
- 1½ cups flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup milk
- Grated zest of 1 lemon
Glaze
- Juice of 1 lemon
- ½ cup sugar
Instructions
Preheat oven to 350°F. Grease a loaf pan.
Cream ½ cup shortening and 1 cup sugar until light and fluffy.
Add 2 eggs and beat well.
In a separate bowl, whisk together 1½ cups flour, 1 tsp baking powder, and ½ tsp salt.
Add dry ingredients to the creamed mixture alternately with ½ cup milk, mixing until just combined.
Stir in grated lemon zest.
Pour batter into prepared pan and bake at 350°F for 45 minutes until a toothpick comes out clean.
While bread bakes, mix juice of 1 lemon with ½ cup sugar for the glaze.
As soon as bread comes out of the oven, slowly spoon the glaze over the hot loaf, letting it soak in.
Cool completely before slicing.
Tips
- Poke holes in the hot loaf with a skewer to help the glaze penetrate deeper.
- Let the bread cool in the pan for 10 minutes before transferring to a rack.
- Wraps well and keeps for several days at room temperature.
