Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1–2 fresh jalapeños, sliced (leave seeds for heat, remove for milder)

Instructions

  1. In a small saucepan over medium heat, combine 1 cup water and 1 cup sugar. Stir until sugar dissolves completely.

  2. Add 1–2 sliced jalapeños and simmer gently for 5–10 minutes (longer = spicier).

  3. Remove from heat and let steep for 10–15 minutes.

  4. Strain into a glass jar or bottle and cool completely.

  5. Store in the refrigerator for up to 2 weeks.


Tips

  • Adjust steeping time to control spice level
  • Use gloves when handling jalapeños if you’re sensitive to chili oils
  • Serranos make an even spicier version
