Ingredients

  • ½ cup cornmeal (65 g)
  • ½ cup all-purpose flour (65 g)
  • 2 Tbsp sugar (25 g)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk (120 ml)
  • 1 Tbsp vegetable oil (15 ml)
  • 1 egg, lightly beaten

Instructions

  1. In a medium bowl, whisk together ½ cup cornmeal, ½ cup flour, 2 Tbsp sugar, 1 tsp baking powder, and ¼ tsp salt.

  2. In a separate bowl, combine ½ cup milk, 1 Tbsp vegetable oil, and 1 lightly beaten egg.

  3. Stir the wet mixture into the dry ingredients until just combined—do not overmix.

  4. Heat a lightly greased griddle or skillet over medium heat.

  5. Pour batter into 3-inch rounds and cook until bubbles form and edges begin to dry, about 2–3 minutes. Flip and cook until golden brown, another 1–2 minutes.

  6. Allow to cool, then split in half and toast before serving.


Tips

  • Texture is firmer than pancakes, closer to English muffins
  • Serve with butter and jam, or use as a base for savory toppings
  • Store extras in an airtight container; they toast beautifully the next day
