🌽 Cajun Corn Stew
Ingredients
- Olive oil
- 2 cloves garlic, minced
- 1½ small red bell peppers, diced
- 1 medium onion (white or yellow), diced
- 1 smoked sausage, sliced
- ½" piece habanero, minced (adjust to taste)
- ¼–½ bottle chardonnay
- 2 cans creamed corn
- 1 can corn niblets, drained
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat.
Add 1 diced onion and cook until browned.
Add 2 minced garlic cloves, 1½ diced red bell peppers, and ½" minced habanero. Sauté until softened.
Add 1 sliced smoked sausage and brown lightly.
Pour in ¼–½ bottle chardonnay and stir, scraping up any browned bits.
Add 2 cans creamed corn and 1 can corn niblets.
Stir to combine, cover, and cook for 20–30 minutes until flavors meld.
Season to taste and serve.
Tips
- Start with less habanero—you can always add more heat but can’t take it away.
- Andouille sausage works great for extra Cajun flavor.
- Serve over rice or with crusty bread.
