🌽 Cajun Corn Stew

Ingredients

  • Olive oil
  • 2 cloves garlic, minced
  • 1½ small red bell peppers, diced
  • 1 medium onion (white or yellow), diced
  • 1 smoked sausage, sliced
  • ½" piece habanero, minced (adjust to taste)
  • ¼–½ bottle chardonnay
  • 2 cans creamed corn
  • 1 can corn niblets, drained

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.

  2. Add 1 diced onion and cook until browned.

  3. Add 2 minced garlic cloves, 1½ diced red bell peppers, and ½" minced habanero. Sauté until softened.

  4. Add 1 sliced smoked sausage and brown lightly.

  5. Pour in ¼–½ bottle chardonnay and stir, scraping up any browned bits.

  6. Add 2 cans creamed corn and 1 can corn niblets.

  7. Stir to combine, cover, and cook for 20–30 minutes until flavors meld.

  8. Season to taste and serve.


Tips

  • Start with less habanero—you can always add more heat but can’t take it away.
  • Andouille sausage works great for extra Cajun flavor.
  • Serve over rice or with crusty bread.
