π₯ Caesar Salad (Meehan's)
Ingredients
Dressing
- 4 cloves garlic, minced
- Β½ tsp dry mustard
- 3β4 Tbsp Worcestershire sauce
- ΒΎ cup olive oil
- Juice of 1 lemon
- Β½ cup Pecorino, grated
- Black pepper to taste
- Anchovy paste, big squeeze (optional)
Salad
- 1 head romaine lettuce, chopped
- Croutons
Instructions
In a bowl or jar, combine 4 minced garlic cloves, Β½ tsp dry mustard, 3β4 Tbsp Worcestershire sauce, and the juice of 1 lemon. Add anchovy paste if using.
Slowly whisk in ΒΎ cup olive oil until emulsified.
Stir in Β½ cup grated Pecorino and season with black pepper.
Chop 1 head romaine and place in a large bowl.
Toss with dressing to coat. Top with croutons and extra Pecorino if desired.
Tips
- Let garlic sit in lemon juice for 5 minutes before adding oil to mellow the bite.
- Use a mortar and pestle or the back of a fork to mash the garlic into a paste for smoother dressing.
- Dressing keeps refrigerated for up to 5 days.
